- 53 ozs Pumpkin
- 1 lemon
- 1 Orange
- ⅜ cup Apple juice
- 1 Tbsp freshly grated ginger
- 2 ¼ cups preserving sugar (1:1)

Preparation steps
1.
Peel the pumpkin and remove the seeds. Cut the pumpkin flesh (there should be about 1 kg/2 lbs) into narrow wedges.

Squeeze the juice from the lemon and the orange.
3.
Put the pumpkin, ginger, lemon, orange and apple juices into a saucepan and bring to a boil. Stir occasionally. Cook for approximately 20 minutes until soft but not mushy.
4.
Stir in the preserving sugar. Continue to stir while bringing everything to a roiling boil and continue boiling for approx. 30 minutes.
5.
To sterilise the jars fill with boiling water, let stand for 5 minutes and discard the water.
6.
Put the hot preserve into the jars and close immediately.
