- 2 handfuls Arugula
- 8 tramezzini (in slices)
- 150 grams Ricotta cheese
- freshly ground peppers
- 8 slices Prosciutto
- 100 grams sun-dried Tomatoes (in oil)

Preparation steps
1.
Rinse arugula and spin dry. Remove any thick stems. Spread tramezzini slices with ricotta and sprinkle with freshly ground pepper.
2.
Lay a slice of prosciutto on 4 slices of bread and top with arugula.
3.
Drain tomatoes well. Place 2 slices sun-dried tomatoes on each sandwich. Top with remaining 4 bread slices. Slice on the diagonal and serve.
