10 ozs Long grain rice
1 onion
1 garlic clove
1 Tbsp sunflower oil
34 ozs Vegetable broth
18 ozs Peas
1 tsp Turmeric
1 tsp Garam Masala
½ tsp ground cilantro
4 Tbsps slivered almonds
14 ozs smoked Salmon
salt

Rinse the rice and drain. Peel and finely chop the onion and garlic.

Heat the oil in a pressure cooker over medium and cook the onions and garlic until translucent. Add the rice and sauté to coat. Add the broth, stir in the peas, turmeric, garam masala and coriander and close the pressure cooker. Heat until the pressure is at high and cook 7 minutes. Remove from the heat.

Meanwhile, toast the  almonds in a dry skillet until golden brown. Heat the salmon in a skillet with a little water until it is warm. Remove and tear into pieces.

Quickly cool the pressure cooker down by holding it under cold water and as soon as the pressure is off, carefully open the lid. Fold in the salmon and season with salt. Sprinkle with almonds and serve garnished with cilantro leaves.
