Preparation steps

Place the sugar and water in a large, heavy-based saucepan. Bring to a simmer over a moderate heat, stirring occasionally to dissolve the sugar.

Simmer for a further 2-3 minutes then remove from the heat and allow to cool.

Place the cherries in a large, sterile glass jar.
4.
Once the sugar syrup is cool, pour over the cherries and seal well.
