- 6 Peaches (slightly under ripe)
- 1 cup caster sugar
- 3 tablespoons water
- 1 cup Orange juice
- 2 Vanilla bean (split)
- ¼ cup unsalted butter

Suggested variations; apricots also work well in this recipe use 12 slightly under ripe apricots instead.
Preparation steps
1.
Wash and cut the peaches in half and remove the stone.
2.
Mix the sugar, water and orange juice together.
3.
Arrange the peaches face down into the slow cooker. Pour the sugar and orange juice mix over the peaches.
4.
Cut the butter up into small cubes and dot around the peaches in the base of the slow cooker so that they are evenly spaced.
5.
Split the vanilla pods in half and arrange close to the peaches. Cook on a low setting for 2 hours until the peaches are tender.
6.
Remove the peaches to a serving dish.
7.
Spoon the cooking liquor over the peaches or reduce in a pan over a high heat for more of a syrupy consistency.
