- 1 vegetable stock cube
- 1 ⅔ cups boiling water
- 6 ozs Couscous
- 1 Tbsp chopped cilantro
- 1 Tbsp chopped parsley
- 8 cherry Tomatoes (quartered)
- 4 scallions (chopped)
- 1 green chili pepper (seeds removed and thinly sliced)
- salt
- peppers
- 10 ozs roasted peppers (in oil)

Preparation steps
1.
Dissolve the stock cube in the boiling water in a pan over a low heat. Gradually stir in the couscous and bring to a boil. Remove from the heat, cover the pan with a well fitting lid and leave to stand for 1 minute.

Remove the lid and using 2 forks, fluff up the couscous grains. Add the herbs, tomatoes, spring onions and chilli and mix well. Season to taste with salt and pepper.
3.
Spoon into a serving bowl and arrange the drained peppers around the edge. Garnish with basil and frisee.
