- 32 ozs red Bell pepper (seeds removed, chopped)
- 16 ozs Red onions (chopped)
- 2 cups Red wine vinegar
- 2 tsps salt
- 1 tsp white peppercorns
- 1 tsp Celery seed
- 1 cup light brown sugar

Put the peppers, onions, vinegar, salt, peppercorns and celery seeds into a large heavy-based pan. Bring to a boil, then reduce the heat and simmer gently, stirring ocassionally until the vegetables are tender.

Add the sugar and stir over a low heat until the sugar has dissolved. Increase the heat and cook steadily until thick.
3.
Spoon into hot sterilised jars. Cover, seal and label.
