- 1 ⅛ cups Couscous (instant)
- ¼ cup sugar
- 2 Tbsps lemon juice
- 1 cup dried Date (pitted, half chopped)
- ¼ cup dried Apricot (chopped)
- ¾ cup almonds (roughly chopped)
- ½ tsp ground cinnamon
- 2 Tbsps Orange blossom water
- 1 tsp Rose water
- brown sugar

Preparation steps
1.
Place the couscous in a bowl and cover with around 300 ml boiling water. Leave to steep for around 10 minutes and then fluff up with a fork.

Mix the sugar and lemon juice in a pot with 3 tbsp water and allow to bubble for around 5 minutes.

Stir the chopped dates, apricots, almonds and cinnamon into the hot syrup. Remove from the heat and leave to cool slightly. Stir in the orange blossom water and the rose water and then add everything to the couscous and transfer to bowl. Serve topped with the remaining dates and the brown sugar.
