Preparation steps
1.
Knead together the prawns, garlic, egg, oats and parsley, seasoning with salt and ground black pepper. Leave for around 10 minutes for the oats to soften. Knead in a further 1-2 tbsp oats if the mixture is too soft.
2.
For the coating, beat the egg and season with salt and ground black pepper.
3.
Shape the prawn mixture into walnut-sized balls. Toss in the flour, coat in egg and toss in the breadcrumbs, then flatten slightly.
4.
Heat 8-9 tbsp oil in a pan and fry the balls on all sides until golden brown. Drain on kitchen paper.
5.
In the remaining oil, fry the bacon until crispy. Drain on kitchen paper then cut into rectangles.
6.
Arrange on a serving plate or individually in small bowls. Serve garnished with a blob of sour cream, 1/4 to 1/2 a tsp caviar and a piece of bacon.
