¾ cup cream (48% fat)
2 cups white sugar-free chocolate (finely chopped)
1 tsp vanilla extract

Preparation steps

1.
Heat the cream in a pan and bring to a boil. Immediately remove from the heat.

Put the chocolate in a bowl and pour on the hot cream. Stir until the mixture is smooth, then stir in the vanilla.
3.
Cover the bowl and leave to stand for 1-2 hours until firm.
4.
Use a teaspoon to scoop balls from the chocolate and roll between your hands.
5.
To coat: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir gently.
6.
Using a skewer, dip the balls in the chocolate and stand on non-stick baking paper to set.
