- 1 ¼ cups white sugar-free chocolate (finely chopped)
- ¾ cup crunchy Peanut butter
- ⅓ cup cream (48% fat)
- Stevia (to taste)
- 1 ⅓ cups plain Sugar-free dark chocolate (chopped)

Preparation steps
1.
Put the white chocolate, peanut butter and cream in a heatproof bowl over a pan of simmering (not boiling) water, stirring until smooth and combined.

Stir in stevia to taste and chill for about 3 hours, until firm.

Line a tray with non-stick baking paper. Using 2 level teaspoons of the mixture at a time, roll into balls. Freeze until firm.
4.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
5.
Using a fork or skewer, dip the truffles in the melted chocolate, shaking off excess. Place on the tray to set in a cool place (not the refrigerator) for at least 1 hour.
