- For the potatoes
- 600 grams small, waxy potatoes
- ½ Cauliflower
- 1 small, spicy red chili pepper
- ½ bunch fresh cilantro
- vegetable oil (for baking sheet)
- salt
- For the peanut patties
- 100 grams blanched Peanuts
- 200 grams breadcrumbs
- 2 eggs
- salt
- freshly ground peppers
- 1 tsp cayenne pepper
- 6 Tbsps sunflower oil

Preparation steps

For the potatoes, cook in boiling salted water and peel. Rinse cauliflower, cut into florets and cook in boiling salted water for 5 minutes. Season potatoes with salt and place on an oiled baking sheet. Roast in a preheated oven at 200°C (approximately 400°F) for 30 minutes or until golden brown. For the peanut patties, crush peanuts in a mortar.

Knead eggs, breadcrumbs and peanuts together. Season with salt, pepper and cayenne pepper. Form little balls and cook until golden brown in hot oil. Rinse chile pepper and cut into thin rings. Pluck cilantro leaves from stems. Arrange potatoes in a bowl with cauliflower and peanut patties. Garnish with chile rings and cilantro leaves. Serve.
