Preparation steps
1.
Wash, drain and dry them in a clean tea towel. Steam the potato in a basket over a pan of simmering water for 20 minutes.
2.
Meanwhile in a clean bowl break the eggs and whisk them together with the salt and pepper.
3.
Melt the butter in a large heavy based frying pan. When it has melted, add the potato slices in one layer.
4.
Pour the beaten egg over and cook over a gentle heat for 5 minutes.
5.
Turn the omelette over using a large lid and continue to cook for a further 3 minutes.
6.
Slide the omelette onto a large warmed serving plate and cut into slices. Serve either hot or cold with chopped chives and mixed leaf salad.
