200 grams waxy potatoes
½ onion
1 Tbsp chopped parsley
3 Tbsps olive oil

Preparation steps

1.

Peel the potatoes and cut into 1 cm (approximately 1/4 inch) cubes. Peel and slice the onion into rings.

Heat the olive oil in a skillet and cook the potatoes for 5 minutes. Add the onions and continue to cook, stirring occasionally, until the potatoes are tender, about 5 minutes. Season with salt and pepper. 

3.

Whisk the eggs with cream and parsley and season with salt and pepper. Pour the egg mixture over the potatoes. Reduce the heat and cover the pan. Allow to cook until the eggs are set, about 10 minutes.
