700 grams starchy potatoes
2 onions
6 Tbsps olive oil
5 eggs
salt (and pepper)

Preparation steps

Peel and rinse the potatoes and cut into thin slices. Peel and finely chop the onions.

Heat half the olive oil in a pan and sauté the potatoes and onions over medium heat for 25 minutes. Season with salt and pepper.

Beat the eggs and season with salt and pepper. Cool the potatoes slightly and mix into the eggs.

Heat the remaining olive oil in the pan and pour in the egg-potato mixture. Cook for about 6 minutes until the eggs solidify and then flip over with the help of a plate. Finish cooking for a further 6 minutes.

Cut the tortilla into pieces to share and serve arranged on plates.
