1 carrot
1 onion
400 grams floury potatoes
2 Tbsps vegetable oil
4 slices Bacon
300 grams Sauerkraut (canned)
salt
freshly ground peppers
50 grams Crème fraiche

Preparation steps

1.

Peel and rinse carrot, dice. Peel onion and coarsely chop. Rinse, peel and dice potatoes.

2.

Heat oil in a saucepan, saute onion, carrot and potato briefly. Deglaze pan with broth and simmer, covered, for 15-20 minutes on low heat.

3.

Chop bacon and cook until crispy in a pan, drain on paper towels. Drain sauerkraut and chop coarsely.

4.

Puree soup coarsely, add sauerkraut and heat through, season with salt and pepper. Pour into bowls, sprinkle with bacon and top each bowl with 1 dollop of sour cream. Serve.
