- For the soup
- 500 grams starchy potatoes
- 150 grams Celery root
- 1 onion
- 1 garlic clove
- 2 Tbsps butter
- 500 milliliters Vegetable broth
- 300 milliliters milk
- 1 generous pinch ground Saffron
- 60 milliliters dry white wine
- salt
- freshly ground peppers
- 3 Tbsps Whipped cream
- For garnishing
- 4 Slices of toast
- 1 Tbsp butter
- 4 tsps Salmon caviar

Preparation steps

Peel, rinse and dice potatoes and celery. Peel onion and garlic, chop finely. Heat butter in a saucepan and saute onion and garlic until translucent. Add diced vegetables and saute briefly. Add vegetable stock and milk and simmer for about 20 minutes. Puree soup.

Add saffron to the soup and bring to a boil again, simmer for about 3-4 minutes. Add white wine and season with salt and pepper, add a little cream.

Cut out stars out of bread slices. Toast stars in a dry pan until golden brown. Pour soup into warmed bowls and garnish with star toasts and salmon caviar. Serve.
