- For cakes
- 700 grams potatoes
- salt
- freshly ground peppers
- Nutmeg
- 1 Tbsp Potato starch
- 3 egg yolks
- 1 Tbsp softened butter
- 4 Tbsps Whipped cream
- 2 Tbsps chopped parsley
- clarified butter (for sautéing)
- For garnish
- 150 grams Crème fraiche
- 40 grams Salmon caviar (or more as desired)

Preparation steps
1.
Peel the potatoes and cook in simmering salted water for about 30 minutes. Drain, let cool slightly, then press through a potato ricer into a bowl. Stir in potato starch, egg yolks, softened butter, cream, parsley, and salt, pepper, and nutmeg to taste.

On a floured surface roll the dough out to a thickness of about 2 cm (about 3/4 inch) and cut into rounds.

Heat the clarified butter in a pan over medium heat and sauté the potato cakes until golden, about 3 to 4 minutes per side.
4.
To serve, place cakes on serving plate, dollop with creme fraiche and top generously with caviar.
