- 500 grams new potatoes (cooked)
- 400 grams Smoked salmon (in thick slices)
- 600 grams baby Spinach
- 1 Red onion
- 50 grams Walnut (coarsely chopped)
- 4 eggs
- 75 milliliters Red wine vinegar
- 75 milliliters mild Nut oil
- 1 tsp honey
- 1 tsp hot Mustard
- salt
- freshly ground peppers
- Chives (for garnish)

Preparation steps
1.
Peel and slice potatoes.
2.
Rinse, trim stems and drain spinach.
3.
Peel, halve and slice onion.
4.
In a pot of simmering water mixed with 25 ml (approximately 2 tablespoons) vinegar, poach eggs until yolks are as soft as wax.
5.
Mix remaining vinegar with oil, honey and mustard and season with salt and pepper.
6.
Arrange potatoes, smoked salmon and spinach leaves decoratively in a large bowl. Sprinkle with walnuts and onions and top with poached eggs on. Sprinkle with freshly ground pepper and chives. Serve dressing on the side.
