- 200 milliliters Vegetable broth
- 4 Tbsps olive oil
- 4 Tbsps lemon juice
- 200 grams Feta
- 100 grams black Olives
- salt
- peppers
- 2 Tbsps chopped Dill
- 2 Tbsps chopped parsley

Preparation steps

Rinse the potatos and cook in boiling water for 20 minutes. Drain, cool slightly, then cut into 1/2 cm (approximately 1/4 inch) thick slices. Heat the vegetable broth, and stir in the olive oil and lemon juice. Pour the broth over the potatoes, and let soak for 20 minutes.

Crumble the feta cheese and drain the olives. Season the potato mixture with salt and pepper, then top with the feta cheese and olives. Garnish with the herbs and serve.
