- 800 grams potatoes
- 1 onion
- 2 sprigs parsley
- 4 sprigs Chervil
- 2 Tbsps scallions
- 100 milliliters warm Beef broth (or vegetable broth)
- 1 tsp sharp Mustard
- 2 Tbsps Wine vinegar
- 3 Tbsps sunflower oil
- 1 pinch sugar
- salt
- peppers

Preparation steps

Step 1

Rinse the potatoes and steam for about 30 minutes. Cool slightly, peel and slice. Place in a bowl.

Peel and finely chop the onion. Rinse the parsley and chervil, shake dry, pluck and chop. Mix the parsley, chervil and chives.

Mix the broth, mustard, vinegar and oil. Mix in the onion, herbs and season with salt, pepper and sugar.
