Potato Rosti with Smoked Salmon
- For the rosti
- 1 kilogram waxy potatoes
- 2 eggs
- 1 tablespoon Pastry flour
- freshly ground peppers
- vegetable oil (for frying)
- 400 grams smoked Salmon (sliced)
Peel the potatoes, rinse and coarsely grate, then mix with eggs and flour. Season with salt and pepper. Heat the oil in a large pan. Carefully drop 1 tablespoon portions of batter into the oil, flatten and fry until golden brown on both sides.
Whip the cream, stir in the horseradish and season with salt and pepper.
Serve the pancakes with sliced smoked salmon and horseradish cream.
