- ½ bunch Tarragon
- 1 kilogram starchy potatoes
- 1 onion
- 2 garlic cloves
- 3 Tbsps olive oil
- 1 l Broth
- ½ whole lemon
- 150 grams cooked ham (sliced)
- 1 Tbsp Crème fraiche
- salt
- freshly ground peppers

Preparation steps

Rinse the tarragon and shake dry. Pluck the leaves, set some aside for garnish and finely chop the rest. Peel the onion and garlic and finely chop. Peel the potatoes and cut into small cubes. Cut the ham into small cubes.

Saute the potatoes in hot oil in a large pan over medium heat. Add the garlic and saute. Pour in the broth, cover and simmer about 25 minutes. Rinse the lemon with hot water and finely grate the zest. Stir lemon zest and creme fraiche into the soup. Remove and reserve 2 ladles full of soup and mash or puree the remaining soup. Add the tarragon, ham and reserved unpureed potato soup, heat and season with salt and pepper. Serve garnished with the reserved tarragon.
