Potato and Lentil Cakes
Peel coarsely grate potatoes. Simmer lentils in water for 10 minutes. Drain lentils and mix with potatoes. Dice feta. Rinse and thinly slice scallions. Add feta and scallions to potato mixture. Season with salt, pepper and nutmeg. Heat some oil in a pan. Shape potato mixture into patties and cook in hot oil until golden brown on both sides. Remove from pan and place in an oven preheated to 70°C (approximately 150°F) to keep warm.
Rinse and shred lettuce. Rinse and thinly slice radishes. Combine lemon juice, mustard and oil. Season with salt and pepper, and drizzle over lettuce and radishes.
Plate potato cakes and serve with salad.
