Potato and Leek Spread
Rinse leeks and cut into thin rings. Blanch in boiling salted water for 5 minutes, rinse immediately in ice water and drain well. Peel potatoes and cut into small cubes. Rinse scallions and cut into rings. Combine potatoes and scallions with crème fraîche and sour cream, season with salt, pepper and cumin powder. Fold in leeks and serve as needed.
