For the pork
500 grams Pork tenderloin

1 sprig rosemary
clarified butter (for sauteeing)
For the chanterelles
1 onion
200 grams Chanterelle

Preparation steps

1.

Trim the pork and season with salt and pepper.

Heat some butter in a pan and sear the pork with a sprig of rosemary. Then cover and let simmer 10-15 minutes over low heat.

Meanwhile, peel and dice the onion and trim the chanterelles. Heat some butter in a pan and sauté the onion and the mushrooms about 5 minutes.

4.

To serve, place the mushrooms on a plate, slice the pork tenderloin and place on the plate and top with the cranberries Garnish with rosemary sprigs.
