400 grams Pork cutlet
4 shallots
2 cloves garlic cloves
1 pc ginger about 3 cm (approximately 1 inch)
1 Tbsp Coriander
½ tsp ground cumin
1 tsp salt
2 Tbsps sugar
3 Tbsps sunflower oil
For the dipping sauce
16 Wooden skewers
neutral vegetable oil (for frying)
2 Tbsps lemon juice
1 Tbsp Fish sauce
1 Tbsp light soy sauce
1 tsp dried Italian Fresh herbs (Or 400 grams, jarred, or approximately 14 ounces)
1 Tbsp honey

Preparation steps

Rinse the pork, pat dry and cut into 10 x 3 cm (approximately 4 x 1 inch) strips. Peel the shallots and chop very finely. Peel and press the garlic. Peel the ginger and grate finely. Crush the coriander seeds in a mortar, then add the shallots, garlic, ginger, cumin powder, salt, sugar and oil and grind to a paste. Mix the meat with this paste and marinate for 1 hour.

Meanwhile, soak the wooden skewers in cold water and prepare the dipping sauce. Stir the ingredients and season to taste. If it is too spicy, add more lemon juice and sugar.

Put the marinated meat strips on wooden skewers. Grill the pork satay on a grill or fry in oil in a frying pan until golden brown. Serve with the dipping sauce.
