- 8 ready-made Pie crust (cut in half)
- 2 Tbsps sunflower oil
- 1 cup Pancetta (finely diced)
- ½ round Lettuce (leaves separated)
- 2 Plum tomato (seeded and diced)
- 1 Avocado (finely diced)
- ½ lemon (juiced)
- salt
- peppers

Preparation steps
1.
Heat the sunflower over a high heat and saute the pancetta for 3 minutes until golden and crispy. Transfer to kitchen paper to drain.
2.
In a mixing bowl, combine the tomato, pancetta, avocado, lemon juice and seasoning.
3.
Lay the crepes on a flat surface and cover with an even layer of lettuce leaves. Arrange the tomato, bacon and avocado mixture on top.
4.
Fold the bottom end inwards and over and roll to create a wrap. Serve in pots.
