4 Pork cutlets (each about 125 grams)
2 Apple
4 pitted Dried plums
2 Tbsps sugar
2 Tbsps lemon juice
½ tsp ground ginger
2 Tbsps Pastry flour
4 Tbsps vegetable oil
1 onion
¼ l Apple juice
4 Tbsps Red currant jelly
salt
freshly ground peppers

Preparation steps

1.

Rinse pork cutlets, pat dry and slightly flatten.

2.

Mix water with sugar and lemon juice in a saucepan.

3.

Peel apples, remove cores and cut flesh into 1 cm (approximately 1/2 inch) thick slices. Place the 4 largest slices aside and place remaining slices in lemon water. Bring to a boil, cover and remove from heat. Cool.

Place a large apple slice and a dried plum in the middle of each pork cutlet. Sprinkle with ginger. Fold up pork, secure with toothpicks, season with salt and pepper and coat with flour.

Peel onion and cut into strips.

Place pork in a pan with hot oil. Cook for about 3 minutes or until golden brown. Flip and add onions. Cook for an additional 3 minutes. Deglaze with apple juice, cover and cook over low heat for about 10 minutes. Season with salt and pepper. Place on dinner plates and serve with cooked apple pieces and jam.
