4 Pork cutlets (each about 150 grams)

4 tablespoons Pastry flour
8 tablespoons breadcrumbs
2 small eggs
2 tablespoons Whipped cream
150 grams clarified butter

Preparation steps

1.

Rinse chops, pat dry and season with salt and pepper. Put flour and breadcrumbs in two separate dinner plates. Beat eggs with cream. Coat chops with flour and tap off excess flour, dip into egg mixture and roll in breadcrumbs.

Heat butter in a pan and cook cutlets for about 5 minutes per side or until golden brown.

Remove from the oven and drain on paper towels. Arrange on plates and serve with risotto and salsa verde, if desired.
