- 56 ozs Rack of pork (with bones)
- 2 Tbsps vegetable oil
- ⅔ cup Pear juice
- 1.333 cups Meat stock
- 8 onions
- 4 Pear (halved)
- 1 handful Watercress (to garnish)
- coarse Sea salt
Preparation steps

Heat the oven to 190°C (170°C in a fan oven), 375°F, gas 5.

Season the meat with salt and ground black pepper and fry in hot oil in a large roasting tin on all sides for 5-10 minutes. Add the pear juice and the stock and roast for around 90 minutes, basting with the juices every so often.

Add the onions to the meat for the final 25 minutes of cooking time and place the pears on a rack above the roast.

Cover the meat with aluminium foil and leave to rest for around 10 minutes. Season the gravy with salt and ground black pepper and then serve the roast in the roasting tin along with the onions and the pears. Garnish with the watercress and a little sea salt.
