1 Pork tenderloin 600 g (approximately 21 ounces)

2 Tbsps vegetable oil
1 shallot
2 garlic cloves
3 sprigs parsley
1 dried red chili pepper
4 Tbsps olive oil

Preparation steps

Wipe the mushrooms with a damp cloth and cut in half. Rinse the pork, pat dry, remove the excess fat and tendon, and cut into 1 cm (approximately 1/2 inch) thick slices. Season with salt and pepper. Heat the vegetable oil in a large skillet and sauté the pork and mushrooms until golden brown.

Peel and finely chop the garlic and shallot. Rinse the parsley, pat dry, remove the leaves and chop finely. Grind the dried chili pepper with the salt in a mortar until finely ground. Mix with the garlic, shallot, parsley and olive oil. Slide the pork and mushrooms onto wooden skewers and brush with the sauce. Transfer to a large platter and serve.
