Sprinkle the gelatine over the water in a small bowl. Leave to stand until softened and swelled.
Put the pomegranate juice, lemon juice and sugar to taste into a pan and heat gently until the sugar dissolves completely. Remove from the heat.
Slowly stir in the gelatine until completely dissolved.
Pour into 4 serving glasses, about 2/3 full. Chill for 2-3 hours until set. Reserve the remaining gelatine mixture at room temeprature.
Place the apples and pomegranate seeds on top of the set jellies and pour over the remaining jelly. If the reserved jelly has set, heat gently until melted, then cool completely before pouring over the fruit.
Chill for 4 hours until set.
