250 grams Kumquat
1 Vanilla bean
750 milliliters dry white wine (or dry apple cider)
1 Cinnamon stick
1 tsp cloves
3 Cardamom
1 Star anise
150 grams sugar
1 pc Lemon peel
4 ripe Pear (such as Bosc or Bartlett)

Preparation steps

1.

Rinse and slice the kumquats.

2.

Halve the vanilla bean lengthwise and scrape out the seeds. Bring the white wine or cider and other spices, sugar and lemon rind to a boil in a pot. Let simmer for about 10 minutes over medium heat.

Peel and halve the pears, then remove the core with a melon baller or spoon.

4.

Place pears and kumquats in the pot and poach for about 10 minutes. Remove pot from heat and let fruit cool in the poaching liquid.

5.

Arrange the pears in servings bowls and pour the poaching sauce and kumquats on top. Serve immediately.
