- 4 ripe Pear
- 1 cup water
- 2 Tbsps honey
- 2 Cinnamon stick (broken)
- 1 cloves
- 4 Cardamom (crushed)
- 1 Star anise
- 1 lemon (juice and grated zest)
- 1 Orange (juice and grated zest)
- 1 Orange (unpeeled and sliced)
- ¼ cup sugar

Preparation steps
1.
Peel the pears, but leave the stalks intact.
2.
Put the water, honey, spices, orange and lemon juices and zest in a wide shallow pan and simmer gently, until the honey has melted.
3.
Add the pears and orange slices and add more water to cover them, if needed.
4.
Cover the pan and simmer gently for about 20 minutes until the pears and oranges are tender. Check occasionally to make sure the liquid isn't running dry and the pears aren't sticking.
5.
Remove the pears and orange slices from the pan and place in a wide, shallow dish.
6.
Add the sugar to the juices in the pan and boil rapidly until the juices have thickened into a syrup. Pour through a sieve (discard the spices) over the pears and leave to cool for at least 4 hours.
