350 grams Blackberry
4 large ripe Peaches
2 Tbsps sugar
mint (to garnish)

Preparation steps

Rinse the blackberries.

Cut an "X" in the bottom of each peach, briefly dip in boiling water, shock in ice water and peel. Dissolve the sugar in a little water and simmer for 2 minutes over low heat. Add the wine, lime juice, peaches and 100 grams (approximately 3 ounces) blackberries and bring to a boil. Remove from the heat, cover and set aside for 10 minutes.

Remove the peaches and strain the poaching liquid. 

4.

Arrange the peaches and poaching liquid in serving bowls. Garnish with the remaining blackberries and mint leaves.
