Preparation steps

1.

Squeeze lemon juice and combine with 1 teaspoon of salt, peppercorns and bay leaves in about 1 liter (approximately 4 cups) of hot water in a pot. Let stand for about 10 minutes.

Rinse and pat dry fish, add to the pot and simmer at just below the boiling point at about 80°C (approximately 175°F) for about 10-15 minutes. Remove from a slotted spoon and serve with mustard sauce, if desired.
