- 6 cups potatoes (cut into chunks)
- 2 eggs (beaten)
- 2 Tbsps sunflower oil
- 1 ⅔ cups gluten-free all purpose flour
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 6 Tbsps sugar
- 25 Plum (damson)
- 2 Tbsps butter
- 3 cups breadcrumbs

Preparation steps
1.
Cook the unpeeled potatoes in a pan of boiling water. Drain well and leave to cool slightly, then peel and mash the potatoes.
2.
Put the mashed potatoes in a large bowl and add the eggs, oil and flour. Mix well to a sticky, smooth dough.
3.
Mix together the cinnamon, vanilla and sugar in a small bowl. Put 1/2 teaspoon into the centre of each damson.
4.
Heat the butter in a frying pan Add the breadcrumbs and toast them for 5 minutes. Remove from the heat and place on a large plate.
5.
Divide the dough into 25 pieces. Flatten each with floured hands, place a damson in the centre of each disc then roll in your hands to enclose the damsons.
6.
Bring a large pan of water to a boil. Place a few dumplings at a time into the pan and cook for 5 minutes. When ready, they will rise from the bottom of the pan.
7.
Remove them from the pan using a slotted spoon and roll in the breadcrumbs. Leave to cool.
8.
Sift icing sugar over the top just before serving.
