For the sauce

skinless, boneless Chicken breasts

large egg (beaten)

To garnish

Preparation steps

1.
For the sauce: heat the oil in a pan and cook the garlic and onion for 5 minutes.

Stir in the tomatoes and tomato puree, followed by the remaining ingredients. Reduce the heat, cover and cook simmer gently for 30 minutes, until thickened. Set aside.
3.
Heat the oven to 180°C (160° fan) 350°F gas 4.

For the chicken: mix together the breadcrumbs, cheese, garlic powder, salt and pepper.

Heat the oil in a frying pan.

Dip the chicken breasts first in the egg (shaking off any excess egg) and then coat in the breadcrumb

mixture.
8.
Place in the pan and cook for 3-4 minutes on each side until browned. Place in a single layer in a baking tin or dish.
9.
Spread the sauce over the chicken.
10.
Bake for about 35-45 minutes (depending on thickness) until cooked through.
11.
Place a slice of mozzeralla on top of each cooked breast, then return to the oven for 4-5 minutes, until the cheese has melted.
12.
Garnish with basil leaves.
