Place the chicken between two pieces of clingfilm and bat out until a bit thinner with a rolling pin. Using a sharp knife, cut a pocket into the side of each chicken.
Stuff the pocket with mozzarella and close the edges of the chicken back over to enclose the cheese.
Season, then dunk each pieces into flour, then egg then the breadcrumbs.
Heat the oil in a large pan and fry until golden and crisp and the chicken cooked through – 8-10 minutes. Add the halved tomatoes to the pan and cook until just collapsing. Serve with the chicken.
