For the lamb burgers
18 ozs ground lamb
1 clove garlic cloves (crushed)
1 small onion (finely chopped)
¼ tsp ground Turmeric
1 tsp ground cilantro
¼ tsp ground Cumin
salt
freshly ground Black pepper
Oil (for brushing)
For the aioli
3 cloves garlic cloves (crushed)
2 egg yolks
1 Tbsp Dijon mustard
1.333 cups olive oil
½ tsp lemon juice
salt
peppers
To serve
Flatbread (or pita)
Watercress
sliced Tomatoes

Product recommendation
Don't use extra-lean mince as the fat is needed to help bind the burgers and keep them juicy. The aioli will keep covered in the refrigerator for up to 2 days.
Preparation

1 Bowl, 1 Wooden spoon, 1 Hand mixer, 1 Baking sheet, 1 Parchment paper, 1 Rubber spatula, 1 Cutting board, 1 Small knife, 1 Measuring cups

Preparation steps

Place the minced lamb in a mixing bowl and add the garlic, onion, turmeric, coriander and cumin. Season well with salt and pepper and mix by hand until combined.

Shape the mixture into 4 burgers. Place the burgers on a tray and chill for at least 30 minutes.

Heat the grill.

Brush the burgers with a little oil and grill for about 5-6 minutes each side, until cooked through.

For the aioli: put the garlic, egg yolks and mustard into a food processor or blender. Blend into a paste and very slowly drizzle in the olive oil to make a thick mayonnaise-like sauce.

Add the lemon juice and season to taste with salt and pepper. Spoon into a serving bowl

Slice open the bread and place the burgers inside the bread with watercress and tomatoes. Serve with the aioli.
