12 small Pita bread
For the burgers
4 shallots (finely chopped)
2 Tbsps butter
6 Tbsps Oil
1 ¼ cups coarsely ground, green Spelt
3 cups vegetable stock
1 large carrot (coarsely grated)
1 bunch parsley (50 g | 1 cup)
¾ cup grated Gouda
2 small eggs
salt
freshly ground Black pepper
breadcrumbs (if necessary)

Lettuce
cocktail sausage (of your choice)

1 Cutting board, 1 Small knife, 1 Baking sheet, 1 Kitchen towel, 1 Small bowl, 1 Teaspoon, 1 Tablespoon, 1 Toothpick, 1 Aluminum pan, 1 Parchment paper

Preparation steps

Heat 2 tbsp butter and sweat the shallots until translucent. Add the spelt and carrots and sweat briefly, then stir in the stock and cook over a very low heat for about 20 minutes, until the grain has absorbed the liquid. Remove from the heat and leave to cool.

Stir in the chopped parsley, cheese and eggs and shape the mixture into 12 small burgers. Add a few breadcrumbs if the mixture is too soft. Heat the oil in a frying pan and fry the burgers for about 3-4 minutes each side, or until golden brown.

Wash and slice the tomatoes.

Split the pita breads and put a burger and a couple of tomato slices in each one. Serve on lettuce with a little cocktail sauce and a garnish of parsley.
