- ½ oz Dried yeast
- 1 tsp sugar
- 9 cups Bread flour
- 1 Tbsp salt
- 4 Tbsps sesame oil (light)

Preparation steps
1.
Dissolve the yeast and sugar in approx. 500 ml lukewarm water.
2.
Mix the flour and salt in a bowl. Gradually add the yeast water and knead in. Add the oil and knead the dough until it comes away from the sides of the bowl. Add a little more flour or water if necessary. Cover the bowl with a damp tea towel and leave in a warm place to rise for approx. 1.5 - 2.5 hours.

Heat the oven to 250°C (225°C in a fan oven), 475°F, gas 9.
4.
Place the dough on a floured surface and shape it into a roll. Slice into 10 - 12 equal-sized pieces. Roll out each piece into a pitta of approx. 12 cm diameter.
5.
Place the pittas on a floured baking tray and bake for approx. 10 minutes on a low shelf. Then place on the middle shelf and bake for a further 10 minutes approx.
