- For the crepes
- 80 grams Pastry flour
- 2 Tbsps sugar
- 1 packet Vanilla sugar
- 1 pinch salt
- 150 milliliters milk
- 2 medium eggs
- 40 grams Pine nuts
- clarified butter (for frying)
- For the sauce
- 6 stalks mint
- 4 Tbsps honey
- Limes
- 4 balls cherry Ice cream
- mint (and lime wedges for garnish)

Preparation steps

For the crepes, mix flour, sugar, vanilla sugar, salt, milk and eggs to a smooth batter and let stand for about 30 minutes.

Toast pine nuts in a dry frying pan. Set some pine nuts aside for garnish. Finely chop remaining pine nuts and stir into crepe batter. Fry batter in portions in clarified butter into 4 crepes.

For the sauce, pluck mint leaves from stems, chop larger leaves as necessary and stir into honey. Cut lime into thin slices and stir into sauce mixture. Drizzle sauce over crepes, arrange on plates with ice cream and garnish with pine nuts, mint and lime wedges to serve.
