- 1 cup Polenta
- 1 cup pecorino romano (grated)
- ¼ cup butter
- 1 egg (beaten)
- 5 Tbsps olive oil
- 35 ozs Beef fillet (trimmed of fat)
- 2 tsps chopped thyme
- 2 tsps chopped Sage
- 2 tsps chopped rosemary
- 1 sprig thyme
- 1 sprig rosemary
- 12 Sage

Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF gas 6.
2.
Cook the polenta according to packet instructions then beat in the pecorino, butter and egg until you have a thick paste - add a little more water in necessary. Season with salt and pepper and keep warm.

Heat 3 tbsp oil in a roasting pan on the hob and sear the meat all over until well browned. Sprinkle with salt, pepper and half the chopped herbs then spread the polenta over the top and sides of the meat. Set the remaining polenta aside and keep warm.
4.
Spread the remaining oil and chopped herbs over the meat, tuck the other herbs around and roast in the oven for 25 minutes (rare), 35 minutes (medium) or 45 minutes (well done).
5.
Let rest for 10 minutes and serve with the remaining polenta alongside.
