- 32 ozs Beef fillet
- 1 handful sun-dried tomatoes (roughly chopped)
- ½ bunch Basil (chopped)
- salt
- peppers
- 12 slices Prosciutto
- olive oil

... Use the same amount of cooked porcini mushrooms and a clove of garlic instead of tomatoes.
... Use a punchy cheese such as gorgonzola as a filling with the tomatoes.
Preparation steps
1.
Preheat the oven to 230°C | 450F | gas 8.
2.
Run a sharp knife along the length of the beef in the centre and open it out like a book.
3.
Line the centre of the ‘book’ with the tomatoes, basil and a little seasoning. Pull the 2 edges of the beef together.
4.
Lay the slices of prosciutto out overlapping and place the fillet in the centre. Slowly roll up the meat and then push the ends in to secure. Secure either with string or even toothpicks.
5.
Place the fillet in the roasting tin and drizzle with oil. Roast for 25 minutes for rare.
6.
Remove from the oven and leave to rest for at least 10 minutes. Serve carved into slices with grilled polenta.
