500 grams Beef fillet
1 Tbsp Melange Noir (or black pepper)
Sea salt
2 Tbsps Wild garlic oil
750 milliliters Vegetable broth
240 grams Cornmeal
50 grams grated Parmesan
2 Tbsps butter
parsley (for garnish)

Preparation steps

1.

Boil broth. Pour cornmeal into broth and stir well. Simmer for about 35 minutes, stirring constantly, until semolina is swollen. Remove pan from heat, add Parmesan and butter and mix well.

2.

Divide beef into 4 serving pieces. Pat each beef piece dry, season with Melange Noir and brush with oil. Cook beef to desired doneness on grill, season with salt, cut into bite-sized pieces and arrange on plates with polenta. Garnish with parsley leaves.
