Ingredients

For the satay
2 Chicken breasts (skinned)
6 Tbsps smooth Peanut butter
1 tsp Turmeric
½ cup light soy sauce
1 red chili pepper (deseeded and very finely chopped)
For the dipping sauce
3 Tbsps Fish sauce
2 Tbsps light soy sauce
1 Lime (juiced)
1 tsp sugar
2 red chili peppers (sliced)

Preparation steps

Flatten the chicken breasts with a meat hammer or rolling pin and cut each one into strips.

Mix together the peanut butter, turmeric, soy sauce and chopped chilli pepper. Season with salt and pepper.
3.
Mix the chicken strips with the satay sauce and set aside for 10 minutes.
4.
Meanwhile, make the dipping sauce. Mix the ingredients together and set aside.
5.
Heat the grill to its highest setting. Thread the chicken strips onto wooden skewers and grill for about 5 minutes, turning frequently.
6.
Serve the satay skewers with the dipping sauce.
