Ingredients

For the chicken satay
2 garlic cloves
1 shallot
¼ tsp Chili powder
¼ tsp ground Cumin
¼ tsp ground cilantro
2 Tbsps light soy sauce
4 Tbsps Coconut milk
2 Tbsps sesame oil
600 grams Chicken breasts
For the peanut sauce
150 grams unsalted, shelled Peanuts
200 milliliters Coconut milk
2 Tbsps Peanut butter
½ tsp Curry powder
1 whole Lime (Juice and zest)
2 Tbsps freshly chopped cilantro

Preparation steps

Peel the garlic and press cloves into a bowl. Peel the shallot, chop finely and add to the garlic. Mix both with the spices, soy sauce, coconut milk and sesame oil. Rinse the chicken breasts, pat them dry and cut into 2cm (approximately 1 inch) pieces. Add the chicken to the marinade, cover and place in the refrigerator for at least 2 hours.

Sauté the peanuts in an ungreased pan, then allow them to cool and chop coarsely. Boil the coconut milk with the peanut butter and the curry in a saucepan, then add the chopped peanuts and lime zest. Stir in the lime juice and boil for about 5 minutes until creamy, stirring occasionally. Let the sauce cool, and stir in the chopped cilantro.

Preheat a grill. Remove the chicken from the marinade, drain and put on wooden skewers. Cook the chicken on the grill for approximately 6 minutes (or on a grill pan for approximately 8 minutes) and then brush with the remaining marinade.

Serve the chicken satay with peanut sauce.
