150 grams grated Cheese (such as Emmentaler)
2 firm Peaches (or nectarine)
100 grams Pastry flour
3 eggs
120 grams breadcrumbs

Preparation steps

For the peach-stuffed chicken: Create a pocket in the chicken breasts by slicing through horizontally. Unfold the chicken breast and lay flat. Season with salt and pepper to taste. Sprinkle with the grated cheest.

Peel the peaches, halve, remove pits and cut into peaches. Spread the peach pieces on top of the chicken (1/2 peach per chicken breast). Carefully fold the chicken breasts and secure with toothpicks.

Place the flour in a shallow dish. Dredge the chicken breasts in flour. Beat the eggs in a bowl. Coat the chicken in the egg. Place the breadcrumbs in a shallow dish. Coat the chicken in the breadcrumbs.

For frying: Heat the oil in a pot. Add the chicken and cook until golden brown, about 8-10 minutes. Remove and drain on paper towels.

For serving: Slice the chicken breasts and serve with parsley rice if desired.
